I have always loved berry desserts during the summer. To me enjoying the seasonal fruits and vegetables is a must and this dessert is one of my favorites.

There really isn’t a recipe for this. All the measurements are made with love ♥ Can you really ever have too many berries? I think not so when I make this dessert I don’t skimp.

You can use any berries you want. This particular combo is not only beautiful but also flavorful. The balance of sweet to tart is perfect so I tend to stick to these berries: strawberries, blueberries, raspberries and blackberries. The raspberries and blackberries are for the top only. The layers are made with the strawberries and blueberries, and it couldn’t be easier.

The Lowdown and the Flow Down of how this Berry Dessert will Go down…

Start by washing your berries. All except for the raspberries. Never soak them and only rinse them off when you are ready to use them. Raspberries absorb water like a sponge, and you can really water them down which is never good. Keep your berries refrigerated until you are ready to use them and always let them air dry or towel dry before putting them in the refrigerator. Never put wet berries in the fridge.

When I am ready to assemble, I slice up my strawberries and place them in a bowl. I do not want to bring out the juice to fast in this dessert do I will not be adding white sugar to the sliced berries. I will however use some simple syrup in there. Just enough to coat them. You could make an angel food cake or buy one. I chose the latter and I sliced and diced mine into bite size cubes. I found that slicing the cake through the middle and then quartering it off makes sections that are easy to handle.

I like to use a clear dish for this berry dessert so you can see the layers. That’s the best part… well, the taste is the best part. The visual presentation is on point as well I will say so use a clear bowl if you have one, and the deeper the better. I made this dish using a 10″ deep bowl and it was gorgie Georgie. You can check out the video here and see how easy it was.

I start with a base layer of angel food cake. A nice thick one. There’s no skimping in this dessert in my house. next, add a generous layer of whip cream to cover the angel food pieces. Mine is about an inch thick. Then add a layer of the strawberry slices and the blueberries. I put the strawberries down first and them top them with blueberries. Lots and lots of blueberries. Yum! Repeat the layers again ending with a whip cream top. I like to add some whole strawberries to the top with some blueberries, blackberries and raspberries. Is it a lot of berries? Yes, and I will give no apologies for that ☺

I hope you’ll give this simple berry dessert a try. Your family will thank you. I promise.

xoxo,

~ Shawn
