Vanilla Pumpkin Chai Latte Cupcakes with a Brown Sugar and Cinnamon Frosting
Description
a moist and delicious cupcake with notes of cardamon, cinnamon and cloves. This is sure to become a family favorite during those colder months.

Make the Chai Mixture...
Mix together all the ingredients for the chai spice and divide in half.

Preheat the Oven to 350*...
While the oven is preheating line your muffin pan with muffin cups or grease pan if not using them.
In a metal bowl combine the coconut oil, the brown sugar, the vanilla and eggs and the pumpkin using a mixer.
Once incorporated together, add the flour, baking powder and baking soda, the salt and 1/2 of the chai spice mixture.
Fill muffin cups 3/4 full and bake for 15-20 minutes. Don not overcook them.

While the Cupcakes are Baking...
Melt together 2 Tbsp. of the butter, the heavy cream and the brown sugar in a saucepan. Stir constantly to avoid burning and just cook until the granules are dissolved from the sugar. Once dissolved remove from the heat and place in a metal bow in the freezer to chill for 15-20 minutes. Do not freeze, just cool the mixture completely before using.

While the Cupcakes are Cooling...
Remove the mixture from the freezer and add the remaining 6 Tbsp of butter, the vanilla and cinnamon and the powdered sugar. beat until combined and creamy while resisting the urge to consume the entire bowl before it makes it onto the cupcakes. It takes self-control. Trust me :)

The Finale....
Frost each cooled cupcake generously with the frosting and top with a good sprinkling of the reserved chai sugar.
You can add festive pics or cinnamon sticks to the cupcakes for embellishments.
