Are the Winter Blues getting you down? I know I’m over the cold and ready for the warmth of the sun. Doesn’t look like it’s happening outside, but I can make it happen in my kitchen with a delicious dessert that will make you think it’s spring… and least your tastebuds will think so.
This is a classic puff pastry that brings both the flakiness of the pastry and combines it with a sweet, layered interior and a savory chocolate drizzle. Easy Strawberry Napoleon
Description
This is a classic napoleon dessert that is easy to make and bursting with flavor. The unexpected addition of vanilla to the strawberries is a pleasant surprise and elevates the flavor to a new plateau.
There is very little effort involved and the ingredients are ones that I tend to keep on hand so making this dish is as easy as can be. it's a nice surprise for the family and a delicious choice to serve your guests. They'll be impressed and you'll know how easy it was to make.

Preheat the oven to 400*

Unfold a thawed puff pastry and lay it flat. Cut it into 6 equal rectangles using a pizza cutter.
Take the egg wash and brush over the tops of the rectangles. Sprinkle with coarse sugar or colored sugar.
Set on parchment paper on a cookie sheet and bake for 12 minutes or until golden brown.
Cool completely on a wire rack.

Add the sliced strawberries, the sugar and the vanilla to a bowl and mix thoroughly. Set aside.

Whisk the pudding mix and the half n half in a mixer for 2 minutes on a medium speed for 2 minutes.
Let the mixture sit undisturbed for 2-4 minutes until it reaches a soft set stage.
Mix in 2 cups of the whipped cream by hand and gently combine thoroughly.
Cover the mixture and chill for about 30 minutes.

To Assemble the Napoleon
Slice the cooled pastries in half going through the middles only. Set the tops aside.
Spread the pudding mixture over the bottoms of the puff pastries.
Top the pudding with the sliced strawberry mixture.
Top the strawberries with the remaining whipped cream and put the tops of the pastry back on.

In a saucepan over boiling water, melt the chocolate chips and the cream whisking until smooth.
Drizzle over the tops of the pastries.

Dust the tops of the pastries with powdered sugar.

2 Pkgs. Cream Cheese Room Temperature
1/4 c. Granulated Sugar
2 tsp. Vanilla Extract
*Combine all ingredients in a bowl. Spread on the bottom puff pastry and top with strawberries.
