If you're looking for an easy, show stopping dessert look no further than Mille-Feuille. (Pronounced meel-foy) This raspberry dessert is perfect for Easter or just because. it'll become a favorite in the summertime for sure. It certainly is on our house.
This Mille-Feuille is a delicious dessert is made with puff pastry, fresh raspberries, lemon zest, powdered sugar and the insides of a vanilla bean. Are you intrigued yet?
Unfold the thawed pastry and cut into 3 equal rectangles.
Poke the sheets with a fork to keep them from rising too much and dust them with powdered sugar. This will create a caramelized texture on them.
Bake at 425* for 12-15 minutes. Let them cool completely.
In a bowl combine the mascarpone cheese, the heavy cream, powdered sugar, the insides of the vanilla beans, the raspberry liqueur and the lemon zest.
Whisk them together at a high speed until they mixture thickens to a consistency of whipped cream.
Place a puff rectangle on a plate and put a plop of the mascarpone mixture on top. Spread it out evenly.
Place a layer of fresh raspberries on top of the mixture. repeat.
Dust powdered sugar on the top of the dessert and add a couple raspberries and some mint leaves for garnish.
